Yes, true, heatmaps are a good way to see where the user has clicked.
An open source alternative is ClickHeat (albeit a bit fuddly ...)

Can CrazyEgg distinguish the heatmaps for users who have submitted
the form and users who haven't?

I'm starting to work with Omniture's form analysis tools. Haven't
had enough experience to say how well it works, but Omniture in
general is a great package so I expect this feature will be too.

Hmm, sounds like secretly submitting the form without the users's
consent ... Technically you could easily add Javascript to the
unload event of the page to send the required data. And hope the
 users don't find out.

No, definitely not. The client merely wants to have some way of measuring
what the users are doing - not to secretly grab data or anything like that.
They'd be pretty horrified if anyone thought that they were trying to do
something underhand. It's a highly reputable non-profit.

So I think I'd need to add 'nothing underhand' to the requirements for the
tool.

+1 for Clicktale. We've had done good results using it although have
run into problems across multi-page forms.

Because of the privacy issues I would rather recommend A/B or
multivariant testing with Goolge Website Optimizer and/or Goolge
Analytics.
