ubuntumanual, which starts with pwmconfig. 

The results of that are: 
/usr/sbin/pwmconfig: There are no pwm-capable sensor modules installed

So I guess I'll have to put up with the noise, or get out the
wirecutters.

hey Peter, maybe you could find a manufacturer's BIOS upgrade for the
box? I mean short of wirecutters. Or perhaps a good clean would take
some of the load off the fan because temperatures in the core would be
lower/fan would meet less resistance?

Or replace the fan with something from QuietPC?

Sometimes the bearings just get knackered with use combined with an 
uneven distribution of dust on the blades and as such need replacing. 
That said a good clean does cut the noise from my Shuttle's fans 
considerably.

I think it says to gets sensors(1) working first.  Although I'm not sure
the instructions on the page it links to are up to date.

Part of gettings sensors(1) working is to load kernel modules.  Perhaps
it would help.

Have you tried

sudo sensors-detect

That may come up with some modules that it suggests from /etc/modules at
the end.  Try loading each of them in turn.  So if it say `foo' and
`bar' do

sudo modprobe foo
sudo modprobe bar

If there's no errors, see if the output of `sensors' has now improved
compared to before the sensors-detect.  Then try pwmconfig again.

 So I guess I'll have to put up with the noise, or get out the
 wirecutters. 

I found snipping off the metal grill covering my case fan lessened some
of the noise.  The one that stops fingers getting to it.

I just stuck my fingers into the processor fan and stopped it, The main
noise is from the Power supply fans, And I replaced the original PSU
with a 'quiet' one from Maplin some time ago.

I don't think that the PSU fans are controllable, but I do wonder if
both are needed. ( warranty, who worries about those?)

While I had the machine stopped a moment ago, I did give the fans and
heatsink a dusting out, but no noticeable effect. 

Think I'll live with it.  Can't justify replacing the PSU with one from
QuietPC at the moment.

[Dorset] YouTube - word to the wise -

Kdenlive can very easily render videos to FLV(flash video).
They are at least as small as mp4, and of course you have a full choice
of granularity levels in the Kdenlive programme.

But if you do this, the YouTube uploader doesn't need to do any
processing and your video goes live immediately it gets there.
Which is nice.
