Sadly my problem seems a little more complicated. I am using prosper (Weiss layout) and want the character in the author field of the title page. When I do accent-umlaut e as you suggest, lyx shows it beautifully. However, the letter is completely omitted in the postscript version as if it hasn't been typed at all.
