Thanks very much for that answer.  Sadly my problem seems a little more 
complicated.  I am using prosper (Weiss layout) and want the character 
in the author field of the title page.  When I do accent-umlaut e as you 
suggest, lyx shows it beautifully. However, the letter is completely 
omitted in the postscript  version as if it hasn't been typed at all.

I have attached a very simple lyx file to show what I am doing.

Any help is very much appreciated.

Just type it directly in...

You may need to set up a compose key in X (search the net for how: you
may need to assign a key to mean "Compose" by using xmodmap)
