2013-05-30 Thread John Reames
It depends on the machine, the beans and the person working the machine and
beans.

(With old beans, poor quality beans, or a low-end machine, then it is less
likely; with fresh, good beans and any sort of pump-operated machine (without a
pressurized portafilter), then yes, it's highly likely that a normal (even a
non-coffee type) person could taste the difference).

There are really only 2 ingredients; coffee and water, with such a simple
recipe, ingredient quality and will have a much more noticeable effect...

The other thing purists at home-barista (HB) posit is that the dull burrs
found in most burr grinders are not sharp and merely crush the roasted
coffee bean rather than cut the beans to fine brew grinds. The difference
in flavor may only be realized as you brew to the max doing espresso - I
don't know. Brewing coffee and pulling espresso shots is enjoyable - about
as enjoyable as driving a 3-pedal 240D.

Back to burrs from Italy - shipping is rather prohibitive. Item costs half
the shipping cost. Does anyone know how to get around this? Does anyone
have contacts in Italy or Europe that can ship to me cheap? Thanks.

My machine is manual lever laPavoni Europiccola and the grinder was
zassenhaus manual until the QuickMill. The QuickMill seems to make a
difference, but I can't make that claim as Greg requested - side by

Re: [MBZ] OT - Motor Rotation now Espresso

2013-05-30 Thread Greg Fiorentino
I am not any sort of expert on espresso machines, but I think my Saeco Aroma
with pressurized portafilter provides nearly optimum extraction without much
fussing about exact tamping pressure. I absolutely agree that the quality
and freshness of the beans is critical. I have a good friend who fusses
more about beans and grind. I have had some samples at the Stumptown he
frequents and I think my Saeco does better with my beans of lesser marques.

As with ANY culinary pursuit, ingredient quality is always a prerequisite!

You might also want to check the bearings in the motor; I replaced burrs years

Also, if your grinder is a Rossi, you might want to stock up on parts; they

Ordering OE burrs is probably the best bet; many of the aftermarket ones
have fit and/or durability issues...

(This is presuming a commercial grinder...)

You might also want to check the bearings in the motor; I replaced burrs
years ago, and didn't look at the bearings; I ended up having to tear it
down again to replace those.

Thank you for the advice.
Vintage (1980's?) Quick Mill 025B is not commercial, but it has decent
cutting burrs, I think. Search ebay for item 380639095939 for item same as
mine, yes I use 220v step-up transformer. I guess I will need to contact
quickmill to see if they sell burrs so that I can insure proper fit -
shipping is too expensive to mess around with poor fit. If you have
resources that you know, please pass them on - thanks. I probably don't do
expresso much justice with laPavoni Europiccola and Quick Mill, but... I
try to do what I can to enjoy what I pull as espresso, with a tad of
half/half for what I have been told is named cortado. What type of
espresso equipment do you use? Better yet... for mercedes email group,
what mercedes do you drive - I drive 3-pedal 240D 1984. Does anyone else
here do espresso? Does anyone else here read home-barista online forums?

My morning drink is a 16 ounce tumbler of what I refer to as crappacino.

It consists of a weekly assemblage of four cups of freshly brewed espresso, 1
cup of sugar, a shot of vanilla, all mixed into 10 cups of skim milk. This
goes into a plastic pitcher in the fridge which I take my morning beverage from.

Hardly the drink for a purist but it definitely gets me going, and I like a
large glass of milk in the morning, too.

We have a few stove-top machineta and prefer to use Kimbo grounds

I presume you know of orphanespresso.com (mainly lever machine parts), as well
as cafeparts.com (more commercial stuff) and espressoparts.com, since you read
home-barista.com :)

I've got an old Rancilio Audrey (predecessor of Sylvia) and a Cunill Tauro
grinder. I've got an Astoria Lady SAE/1 (110v) on the bench for a rebuild...

All my MB's are two pedal and compression ignition (turbo); one 85 300D and two
99 E300's

[MBZ] OT - Motor Rotation

2013-05-24 Thread Mountain Man
I plan to order espresso grinder burrs. I was told to order burrs based on
which way the motor turns, i.e. right or left turn motor have different
burrs. Why is motor rotation right or left? Why isn't motor rotation
clockwise or counter-clockwise? And then the guy I contacted gave me these
web pages which do not decipher burrs for right or left turn motor? - or am
I blind?

clik translate site on left column, second box down to read stuff in

Using translate.google I was able to decipher that a destra means to the
right and a sinistra means to the left - correct? - anyone know
italian? so I assume the DX is right turn motor and SX is left turn motor?
Thanks.
