Supported by Apple? Apple-shmapple! OSes up to 10.1.5 will run on many 
"unsupported" PCI-based Macs. Read the XPostFacto docs at OWC:

My beige G3/333 doesn't have built-in USB and Jaguar installed with no
problems. Didn't have to use XpostFacto either for some reason. Just updated
a driver or two and switched from the Apple IDE CD drive to an LG IDE drive.
640 megs of ram and it is kinda pokey but not ridiculous. Safari is quick,
Explorer is slow, nothing new there.
The reason I upgraded was simply to get some software off the 'net that
worked on a Mac. Most of the new stuff is only for OS X , hence the upgrade.
Got Firefox for gmail, now it's all good.

Any G3 or G4 or G5 Mac with a built-in USB and 128 MB RAM.
Some older Macs can run OS X with the help of a cool hack called XPostFacto.
IMO, 512 MB RAM should be the real minimum, if you don't do video 
editing.  The Aqua GUI is just so piggy it's too sluggish with less 
memory.

As for 10.0 vs 10.1 vs 10.2 (Jaguar) vs 10.3 (Panther)...  IMO, 
Panther is so much nicer, more robust, and more stable, than its 
predecessors, it's worth having.  If you can't do Panther then 
mby Jaguar or better yet skip OS X altogether - use OS 9.2.2 or 
Linux.

Per Apple, minimum requirements are a Beige G3 or newer Mac except for 
the very first G3 Powerbook (the 'Kanga'), 64 MB ram (iirc, raised to 
128 mb in 10.2), 4GB HDD.

10.3 was the first version to drop any of those systems, it dropped the 
beige G3's and the Wallstreet G3 powerbook.
