I am using both. I use ssh for terminal apps and VNC for GUI programs. SSH is not quick enough for X-apps even though I have cable connection. For example, when I draw a picture on screen with gimp or lyx, the whole picture has to be transfered to X while VNC needs only what will be on screen. You could forward Xproto over ssh to your Xserver...if on windows there are commercial Xservers. I find that X-win32 works the best. Then you won't need a VNC server. This way it will be encrypted (highly) and you can also use compression to speed it up because the encryption will make the packets larger.
