problem solved:
postfix would store the emails in /home/vmail/user
dovecot would read the emails from /home/vmail/domain/user
the solution is to change in /etc/webapps/postfixadmin/config.inc.php from:
$CONF['domain_in_mailbox'] = 'NO';
to:
$CONF['domain_in_mailbox'] = 'YES';

You need to have a MTA listening on port 25, if not, no one would be
able to send you email.
