There are huge number of open connections (netstat -a) in server and
due to this arserver stops working. Following error getting in arerror
log file. Most of the connections from application side only.

It depends on what version of ARS you are on, but if the fields are locked
maybe you need to start by creating an Overlay? If you right-click on the
field, do you have an option to "Create Overlay"? You will also have to create
a view overlay.
Do you want to replace the 3 fields
If you are using version 7.604+ try creating overlays.

2) Overlay - field Assigned Support Company
But field Attributes, Menu Name remain locked.
I cannot substitute the menu with the new custom-menu.

Try using overwrite instead of No Overlay for other attributes.
