standardize names I create a fact recording exactly how the name was written in

I guess it depends. Depending on your genealogy program, you might be able
to store one as a main name and the other as a nickname and have both names
come up.

I was wondering if there was a general consensus on what to do with
names with variations/different spellings (this is almost all of them!).
For example, I have a Helena in my tree and I also have an Elena. I know
these are technically the "same" name but the spellings have been
different.
