That is why I do a quick cooking instead of a long simmer. I like the tomatoes

was nice to do it from mostly garden stuff.
wish i had planted onion/garlic & green peppers.

I wilt some diced onions and sweat some garlic together then add diced
tomatoes, rosemary, basil, salt and pepper and cook it about 10 to 15 minutes
minutes. If you skin the tomatoes before dicing the sauce will be better, but
if you like the cooked skins, leave them on. Everything is to taste
