I just started with cfeclipse myself this past Friday and after having to
take the day off yesterday this is only my 2nd using Eclipse. It prompted
me to default project location when I started Eclipse and I set it there.
I'm sure there is a way to do it in settings as well.

it's simple enough, when creating a project, to point it wherever you want.
