I would like to throw 2 more cents in to the pot of info. Dia is a free
tool to assemble diagrams. It is similar to visio for Windows.

the PCB side and just use the schematic editor

Have a look at EZ Schematics from Wade Electronics. We bought a seat of this,
and I think it's pretty good stuff for as cheap as it is. And it makes some
pretty nice electrical prints.
