I just did the last month for a company who bought 2 other companies. We used
the Quest Migration (QMM) tools to create disabled AD Accounts in all 3
domains. The hard part with three was routing email for a single name space.
With 2 the shares name space is pretty simple. We used the QMM to

company like FOPE do all of your routing for you.
Set the send connectors for all servers to use FOPE
Set all of the servers as none authoritative for the domain
Set FOPE to route inbound email per user to the correct
Login with MFCMAPI and delete the folder. If Outlook needs it, it will recreate
it.
Disclaimer - Might be a good idea to have a backup first just in case.

Exchange does an OK job.. But not a great job for a medical company. I have a
high false positive rate and too many customer emails come from hotmail | gmail
for me to be able to do much with white lists.

The default setting is to keep tracking logs for only 7 days. If I recall... If
you want more turn it up. I cannot think of a way to restore tracking logs; I'm
thinking SOL there.
