I have set this up in a test environment

Upgraded the Outlook 2007 from SP1 to Sp2 and this appears to fix the issue.

In Outlook, yes, you can still view the calendar of a resource room easily. In
OWA you can easily view the Free/Busy time of the resource room calendar when
Use the scheduling assistant. You can view the schedules for all meeting
invitees and any or all of the resource rooms at once.
