The figures you detail below are what I see from my F3K too.
CW gives me about 85-90w PEP.
The F3K drives my Linear Amp UK Ranger 811H amp better than my old
FT1000MP did,
but not as well as my old Tentec Omni VI did, just the nature of the
beast I guess :-)

I've noticed I think since my recent upgrade to PWRSDR v2.2.3 that I
sometimes see a delay in the PTT engaging while running PSK under DM780.
Notice I said sometimes because other times I hit the send tab and transmit
engages immediately, but most times there is quite a delay. Any thoughts?

I don't think you're missing a thing. I had the same experience. Loaded
2.2.3, fresh database, did not import anything, ran the program the first
time and selected the IK3VIG black skin. Everything was fine.
Next time I started Power SDR, the colors on the IK3VIG skin were screwed
up,
I can't speak for DM780, as it is one of the more fickle third-party
programs to get running and support and I don't use it for digital modes.
I can tell you that I do not see any of these PTT assertion problems
with other digital mode programs, such as Fldigi, MixW or JT65-HF just
