brew install go --*HEAD*
Now Xcode compiles without an error and ENABLE_BITCODE=YES

set the XCode `ENABLE_BITCODE` build setting to `NO`, `gomobile` (the
latest version) automatically adds the `-fembed-bitcode` as C flag, here

The -target flag does support architectures. Have you tried -target
ios/amd64,ios/arm64,ios/arm from your example?
I'm not sure I understand the problem with bitcode and macOS; what is the
error you get from -fembed-bitcode?
