Actually it's quite easy to do. Just swipe through the picker at the bottom of the thing and you will hear each app titled. the description is found under that title. I'll do a demo sometime today when I'm more awake. Right now I sound like I have a smoker's cough. but I need to do an addendum

Hi Danny, I think you need to retrieve your mail preferences from your Time Machine backup to get them organized. There's a chapter in the Take Control of Apple Mail in Mountain Lion (or Lion, or Snow Leopard) guide on Back Up and Restore Your Email. It describes multiple ways to do this.
