What phone are you using? I assume you have updated to the latest version of
IOS 4 before trying to update to IOS 5? This may not be important, but when
Lion was released, it required that users update to 10.6.8 I believe before
attempting the update. Maybe something similar here.

this, but I've got a feeling that iTunes v.10+ only works on Lion. Your being
on Snow Leopard might expalin why iOS 5 is not taking.

It is probably iTunes silliness, it could also be that Apple's servers are
taking a hammering at the moment if I were you, I'd try ti again in a few
hours, or perhaps just before you go to bed. The update will take a long time
