Well, I've never used rpm, only apt.
In apt, to get the list of mysql installed packages I do
# dpkg -l | grep -i mysql
you should find the equivalent command on rpm; maybe rpm -l but I'm not
sure.
Then, when I have the list, I can remove each package with
#apt-get remove --purge -u
