Hi scott,
you can go to the microsoft site and get the windows media encoder which
will convert the file from avi to windows media audio (WMA) and depending
on what encoder software you have convert the (WMA) files to mp3. It's a
long way to do it but I don't know of any straight avi to mp3

GoldWave will allow you to open .avi files and convert them to mp3 and many
other types.

like mov, avi, mp4 or the like and make a DVD disk that will play in my DVD
player?
I know files can be saved as data files on a DVD, but I need to save them in
a DVD format.
