Amavisd.-new (2.6.4) as content scanner and Docevot (1.2.15) as delivery
agent.
I have some default values for amavis and a policy for each mailbox.

U should check amavis config, postfix (& dovecot) don't remove amavis headers.

It appears that you are trying to add an envelope recipient via
canonical mapping. That is not possible.

On a side note, very few desktop mail clients support TLS
certificate authentication. Make sure Thunderbird supports this
feature before you spend too much time on it. TLS certificate
authentication is mostly used for MTA-to-MTA auth.

How did you look at the final delivered mail? Did you use cat or vi or
another text editor? Cause if you just try using a webmail or mail client
you may not be able to see those headers...
