I saw the Active/Maintenance option on the General tab, but didn't
realize the "until" part was hidden unless Maintenance was chosen.

The feature you're requesting is already in the product.
Edit an existing entry, on the GENERAL tab you have a line called
"Active/Maintenance", when you change the dropdown next to it to "maintenance"
you can set until WHEN you want it to be in maintenance.

I would like something simple like nagios does.
By default when you put a nagios check into maint mode you can check a box
so it only sticks for X hrs and then automatically re-enables the check and
this is a one time thing.

manually setting an item on maintenance.
If my maintenance period is one time, from 2:00 pm until 3:00 pm on
Monday, I have to either configure the settings on the Schedule tab so
that the item is not checked during that time fram

What about a "set it and forget it" maintenance mode - a temporary
maintenance window instead of a permanent maintenance window.
Put item X on maintenance during time frame Y. When the time frame has
passed, the maintenance setting is removed.
Sometimes maintenance is scheduled for the same time
