UPDATE!
On a hunch I checked the BIOS settings again. The display settings were
set to the Discrete graphics card, BUT there was another setting there
to allow the OS to change back to Switchable graphics if supported, that
was switched to Yes. I changed it to No, and no more issue. Should've

Sorry but I neglected to mention that I already set the BIOS display
config to Discrete, as I'm using Windows XP on the system (XP does not
properly support switchable graphics cards either, as far as I know). I
do have the ATI drivers installed (I've tried without them too)
Went back to Intrepid.
In doing so, I also tried booting from the live CD only a couple of
times consecutively. Same issue. I was thinking to go to a 100% Ubuntu
install at some point (no Windows), but with this kind of issue I don't
think I can risk it!
