I agree that the Ubuntu route will probably be the easiest since there are apt repositories for the things that you'll need. I'm running FreeBSD on mine (FreeNAS with Michael Herger's SlimNAS extension) and the overhead is very low. It doesn't run any GUI and runs pretty decently on a Celeron 600
