Edit > Chang
OOo can track changes - edit > changes > record. These, in the main,
are compatible if the document is stored in .doc format and then
viewed using MS Word.
If you receive a word (.doc) document that has changes tracked, they
appear in OOo based on the options set within tools > options > writer

The settings for what is to be shown in what colour is controlled by
tools > options > writer > changes...
There is not an option for 'delete' to not show deletions... So to
answer your question - it appears that what your after cannot be done.

my deletions should not be visible. So I see where I added text.
With Edit Changes > Record (yes) and Edit Changes > Show (yes) and Tools
> Options > Writer > Changes > Insertions (None) and Deletions (None) I
