iBooks does not stop at the end of each page if you two-finger flick down when the text area has focus. It reads just like Nook and has always done that. It will lose focus for me on my old iPad, so I get bounced up to the top section of the app out of the text area when a page change occurs. Bu

iBooks will read continuously the same as the Nook app. I think it has a slightly longer pause between pages than the Nook, but you don't have to do anything special to have it read continuously. I have only read free books on the Nook app, but that would be no different than a purchased book.
