I have discovered an alternate method to deleting books from the
latest version of the Audible App.
1. Find the second "delete" button. If you are doing successive
right swipes, this button is spoken just before the title of the book
you wish to delete is spoken.

Using iOS8.02 on an iPhone 5s, the only somewhat reliable way that I have found
to delete a book in the most recent version of the audible app with VoiceOver
running, is to double-tap and hold on the book title and while holding swipe
left from the right side to the left side of the screen.

That method has not been reliable for me. Sometimes after pressing the top
delete button, I can find an edit button and sometimes it simply is not on
the screen. Even when it is and I double-t
