The default is that when you delete a message it will end up in the
trash folder, where it'll sit for 30 days before being deleted
permanently. This is actually all done with labels.

It happened to me, only I did not discover it for 5 years. What I do not
remember is whether the setting for gmail to save one's messages even when you
delete them from the device or computer is the gmail default, or if I
accidentally set it up that way when I initially set up my gmail account

The problem is not on the iPhone. You are using IMAP, and the same thing can
happen with POP3, and it is something to do with Google gmail.
The default settings for gmail is to keep all messages, even when you delete
them. Gmail tracks the deletion flag whilst saving the messages. When you use a
