I can confirm this behavior, and like you, I find it annoying. So I'm
interested to know if this can be modified. It just started happening with

You can reorder the languages in the language rotor. Here are the steps
(these also apply to reordering Favourites in the Phone app and in some
other areas I can't think of right now):
Go to the Language rotor. I will use the example of US English and British
English.

brilliantly and thoroughly! It won't solve my default issue though, as I don't
want to change the international settings and change the date etc. I have
reported it to Apple though and maybe they will do something

did it the phone went quiet and wouldn't do anything for a bit and then
