Moz offer a pretty great resource for learning SEO @

Agree that SEO is always changing but fundamental principals like Pagerank
tend to stay fairly consistent I find. Moz explain these principals in a
palatable manner and are keeping it updated with the latest trends too.

Much of the content is free but all becomes unlocked on their $99/month pro
plan. One of their products Open Site Explorer is super helpful identifying
weaknesses in your SEO and observing how you compare to competitors. Worth
trying out for a few months while you go on the quest to learn as much as
you can I would suggest.
