Why don't you use the silver wire for the stir?

Make the stirrer out of a 2-3" length of  #14 copper wire insulation and
shove it on the shaft. As for sppe control "All electronics, 1-800-826-5432,
part #EM-114 $3.50 is a pulse width modulated motor speed control.  I have
sold a bunch to people for just this purpose.

I generally leave the copper inside with about 1/4" removed to fit the motor
shaft, and then I make 15 deg bend about 3/4" from the bottom end.
