I hope he didn't scare you off - I like charts and graphs too, but unfortunately you have to work it out for yourself and make your own! You have it around the other way - why would we only take 1 tbsp. twice a day when we are sick, and drink it by the pint when we are not? If you are sick the one tablespoon twice a day for several days and then increase. The only problem that you may face is Herximeer reaction or "herx". That is a flu like symptom that happens when the CS kills the pathogen faster than the body can expel it. Then back off for several days, drink lots of water and restart at about half the previous amount. Some people drink a quart per day. If you can't live with this kind of flexibility then forget CS.
