Barbara:

Ph testing strips can certainly be used.  I personally use a digital PH
meter.

Reference the following two links, which both have good introductory
information on PH levels and the body ( I of course don't agree with
absolutely every single thing said on the pages! ):

Both the saliva and the urine should be tested for an overall picture of
body health, although different systems in the human body have different
"normal" ph levels.
