I use QuickMail Pro, SIMS, and Communigate Pro.

Communigate Pro has the most features, the most power, and is what I'll call
a "VERY SERIOUS" mail server.  It does require Unix, but will work on
MacOSX.  It's the professional solution.

Quickmail Pro runs on MacOS, and has a bunch of nice features.  A few that
come to mind are:

  Most important:  Ability to exist as mail server using Dial-Up connection
  List Server
  Ability to run Applescript filters
  Directory services, with automatic updating of client address books.
  Personalized forms for intra-office email.

I have been using SIMS for some tasks that I don't want to move over to my
Communigate server.

I'm sure that there's more information on the CE Software website, and a few
reviews that you could locate with Google.
