In case there isn't Contact header in REGISTER request (the rfc
says Contact header MAY be included) what should be the Transport
protocol used for incoming requests to that UA? Should it be as
the transport protocol in the Request?

If there is no Contact header in a REGISTER request, the request does
not affect the bindings of the AOR, but only serves as a query for the
bindings of the AOR. See RFC 3261:

   10.2.3 Fetching Bindings

A success response to any REGISTER request contains the complete list
of existing bindings, regardless of whether the request contained a
Contact header field. If no Contact header field is present in a
REGISTER request, the list of bindings is left unchanged.
