To put B2BUA is in simple terms...A server which is governed by UAC and UAS behavior but not necessarily in same session. So whenever one wants to do something which is not feasible by standard SIP servers, free to do with B2BUA server. It is application server whose implementation (except UAC and UAS) is beyond any standard, hence most popular for doing clever things. :-)
