All you need to make sure you do is setup backup in the GUI to run once a day.
if you want to get the complete backup off that machine create a cron job and copy them from /var/log/sippbx/backup Or use the FTP backup option... If you tweak any other files in /etc such as named.conf or dhcpd.conf you may also want to grab copies of them.
