Just completed building a testing box using this method: Install SIPX from
ISO then restore config together with Vmail. .. It works just fine.
My concern is that Yum update is time consuming and would create extra
traffic through the available internet bandwidth on the VM server which
would affect other users on the same VM specially if the install in being
done during hours

Have you attempted to build a new server with this method to see if it comes
up properly and works without issues?
I think Jesse brings up a valid point - 20 minutes to load a new server from
ISO, and minutes to restore a backup file.

I use cron scripts with dump, lvm snapshots, and a script to do SQL database
dumps.  I would have to recreate the VM after a disaster, but that is pretty
straight forward.  The dump is sent to a staging area (scratch hard drive),
where all dumps are written nightly to an LTO-4 drive.
