Have you attempted to build a new server with this method to see if it comes
up properly and works without issues?
I think Jesse brings up a valid point - 20 minutes to load a new server from
ISO, and minutes to restore a backup file.

I use cron scripts with dump, lvm snapshots, and a script to do SQL database
dumps.  I would have to recreate the VM after a disaster, but that is pretty
straight forward.  The dump is sent to a staging area (scratch hard drive),
where all dumps are written nightly to an LTO-4 drive.
