I'm not sure I understood what you did exactly, but in order to change your default PDF Viewer, you should select a PDF, go to menu “File > Read Informations...”, Select “Preview” in the “Open with” section and then click the “Modify default” or something button right under the file and confirm when asked to. The icons of other files will change after log out (or probably Finder restart). Please note that the exact name of the menus or button can be different, I'm running Mac OS in French. I can't remember if there is another way to change that parameter in the System Preferences. 

Is that what you did?
