any mta can be configured to deliver mail to your home directory
(instead of /var/spool/mail).
any mta can be configured to deliver to maildir format (at least by
changing local delivery programs).
if the filesystem is encrypted, root will be able to read it anyway.
if the email itself is encrypted (pgp, rot13 or something), then it
doesn't matter where its stored, you still have to break the
encryption before reading it.
believe me, if the admin wants to read your mail, you're going to have
a very hard time stopping me.. err "him".
