In a FLS each field coil is in series with a brush set. The power goes through 
the field coil and into the positive brush, through the armature and then is 
grounded on the negative brush which is 90 degrees to the positive brush. If 
you disconnect the brushes from the field coil and have a switch to reverse 
polarity of each brush set it will reverse the motor. It is a lot of work but 
it is doable. It would also require the switch to carry the full current of the 
motor. Maybe you could use a switch to control a DPDT relay that can handle the 
current it takes to run the motor.

Actually if you turn it way off it will turn in the other direction. 
This is how the ESL winches  worked on Goughner frames before Mike Wade 
modified our frames.
