Actually the only thing you'll need to consider, now that you will be protecting this space is what kind of head and pipe to use. While this is not a "Corrosive" atmosphere per say, if they are using it to let bread raise, then S.S. would seem appropriate to meet board of health standards, or maybe the FDA.
