I am not quite sure what you mean by your "start" menu.

If you mean the Apple Menu (the stuff listed under the apple in the upper left corner of the screen) - those items are in the Apple Menu Items folder that is inside the System Folder.

It is customary to place an alias (a shortcut in PC lingo) of the program in the Apple Menu Items folder. However, the system installs a few items that are not an alias, but the actual program. A couple of examples are the System Profiler and the Chooser.

To remove items, you just remove the alias or program from the Apple Menu Items folder.

If you are a little unsure about what you are removing, especially if you are unsure if the item was added by the system, you can create an "Apple Menu (Disabled)" folder, inside your System Folder, and then put the removed items in there. If you are positive the item you are removing is an alias, you can put it in the trash.

If, by "start" menu, you mean the programs that automatically launch when you start up the computer, those items are in the Start Up Items folder inside the System folder. You treat items in this folder in the same manner described above for the Apple Menu Items.

After you have moved items around, or added or deleted items, you should restart your computer.
