And the reason they use this method is to prevent the user from making
multiple copies. Although once the coupon is printed what's to prevent
me from manually copying it?

I did just that and I was prompted to install their program, no thanks.
I e-mail their support this morning and received a reply, see below.

I am sorry you are experiencing problems printing coupons from our
website. All coupons that are printed off the web require that you
download the software (unless that specific software is already
installed on your PC, as in if another vendor uses the same software).
Each coupon you print is unique and encoded by the software so that the
coupons can't be duplicated or used for fraudulent purposes. If you
install the software now, you can use the same software for future
coupon offers.
The Coupon printer is free, safe and easy to use. It does not install
any form of spyware or adware or collect any personal information about
you. Once it has been downloaded and installed, a process that only
takes a few seconds, you will be able to print coupons from our site and
from emails you might receive.
If this is not acceptable to you and you would prefer we mail the
coupon, please reply with your mailing address and I will mail you the
coupon via the USPS.
I apologize for any inconvenience this has caused you. Please feel free
to contact us on our toll free help line at 1-800-543-8873 if we can
answer any additional questions or you are still unable to print our
coupons. Just a note, Home Depot and Lowe's do not accept our coupons.

You are correct in that there is nothing to prevent printing the first
coupon and then making 1000 copies and giving them to all your friends
and neighbors.
The purpose of a coupon is to entice people to buy their product at some
time in the future.
What should they care if they printed a 1000 coupons with their
software, or a 1000 coupons were freely distributed?
