Have you tried holding Shift while clicking the "Reply All" button? That
should give you both HTML and all recipients.
You can select a different "From" identity by pulling it down from the
list above the recipient list.
Not sure why you have all your Sent messages in one box. Seems to make
more work for you.
I think that any reply from any box should pick the original sender
account of that email rather than an account from which the reply is made.
Maybe in the next update?
