Can we rename messages somehow? i.e. change the Subject line?
"Edit as New" and then changing the subject, and then sending it to
myself seems a cheesy workaround.

You don't have to send it. I do Edit as New, change the subject, Save
Draft, then drag it to whatever folder I want to keep it in.
