profile that's not my primary one (e.g. on another machine), I'll set that profile
to write sent messages to my inbox. That way, when I next work from my normal
connection (which is POP), I have a copy of the original message that I can put in
my normal filing system.
That's not it for my situation; the messages from me that get routed to junk
were sent from my phone, or from a different computer.

I found the filter log, conveniently named 'filterlog.html' -- but I haven't
been able to locate what's causing this behavior. Perhaps it's something in the
junk filtering system, rather than my customized message filters.

Each individual profile has its own auto-learn junk filter.

Thus, if you are creating messages on your phone, and they get classified as junk on your primary working computer, the thing to do is to make sure that everything that's getting designated as Junk on the computer gets explicitly marked as Not Junk (using shift-J).

For stuff that you've created, there's enough similarities of messages that it should take designating only a couple as Not Junk for the filter to recognize that your stuff isn't Junk.

If you have several profiles, you'll need to do this exercise on each profile.
