Hey Tim and Robert, Consider turning the excess veggie matter into fuel ethanol. Shredding is possible with equipment from Home Depot or other commercial food processing machines. A grist mill would be super as a preliminary stage for breaking down the material prior to fermentation--just like a cow chewing its cud.
