Hi, i'm one of the developers of the (never-finished) symfony 1.x eclipse plugin:

Personally, i've switched from Eclipse to TextMate a couple of months ago, due to several reasons, one of them was the poor performance of Eclipse on OSX in larger projects. However, the current version of the PHP Plugin for Eclipse 3.7 seems to perform far better than a couple of months ago, so i see several advantages of using an IDE with a more sophisticated autocompletion than a scripteditor like Textmate. As i have more time the next 2-3 months, i've been thinking about resurrecting the idea of a community-developed Eclipse plugin for Symfony2.
